Adding some comments regarding beginner/intermediate levels:
This site offers around 50 texts in simplified Chinese aimed at beginners and another 40 for intermediate learners, all of them in simplified characters. They are easy to access directly on the website with no need to create an account. Each story comes with an introduction in English to give you some context, and for the story itself you can toggle Pinyin and English by clicking a button. Many stories have a rough HSK level associated with them and some of the key vocabulary outside this range are introduced before the story.
